What if someone calls the discard after you pick?

Short answer: put it back
If you have not yet racked or discarded, put the tile back on the wall. The caller gets the discard.
The detail
The calling window stays open until the next player racks the tile she picked, discards, redeems a joker or declares Mah Jongg.
If a call comes before that, put the picked tile back exactly where it came from, at the end of the wall, for the next player to take.
If the call and the racking happen at the same instant, the caller gets the tile.

These follow standard National Mah Jongg League rules. House rules vary; agree on them before you play.
